Royal Shrimp
Large shrimp with firm, slightly sweet meat that are perfect for grilling, frying, and steaming. Their size allows you to cook them whole or cut them in half, and the tender meat absorbs marinades and spices well. When selecting, pay attention to the smell — it should be briny, without ammonia notes, and the shell should be firm and glossy.
About
King prawns are large marine crustaceans that are becoming increasingly popular in Russian kitchens. Their size is impressive: a single specimen can weigh 20–30 grams and reach up to 20 centimeters in length. This makes them an ideal choice for a festive table or when you want to prepare something special without unnecessary fuss.
Taste and Aroma
Royal shrimp meat is tender and slightly sweet, with a pronounced seafood aroma. In its raw form, it is translucent, and when heat-treated, it becomes white and firm. The texture is elastic but not rubbery — this is the main distinction of quality product from overcooked or stale.
Royal shrimp have a more pronounced flavor profile than their smaller relatives. They absorb marinades and sauces well, making them easily adaptable to any cuisine — from classical European to Asian.
How to cook
The main rule: do not overcook. Royal shrimp cook quickly — 4–5 minutes over high heat is enough for frozen ones, 2–3 minutes for fresh. The meat should remain juicy and tender.
- Pan frying with oil and garlic — a classic and quick method
- Grill or barbecue — the meat acquires a smoky crust and stays juicy inside
- Boiling in salted water or broth — for salads and cold appetizers
- Baking with lemon and herbs — creates a festive dish with minimal effort
Pairings and role in dishes
Royal prawns are versatile. They work well as a main dish — with just prawns and minimal side dishes. But they also work great as part of complex dishes: seafood pasta, risotto, paella, Asian soups and noodles.
- Lemon and lime — enhance freshness and seafood flavor
- Garlic and hot pepper — create a contrasting background for tender meat
- Butter and white wine — a classic combination for an elegant dish
- Soy sauce and ginger — reveal shrimp in an Asian context
- Tomatoes and herbs (basil, parsley) — complement without overload
Selection and Storage
Frozen royal shrimp are the main option in stores. Choose packages without ice crust and snow inside: this is a sign of refreezing. The color should be uniform, from gray-green to gray-pink depending on the variety.
Fresh shrimp are less common and require more attention. They should smell of the sea, without an ammonia odor. The shell is shiny, the eyes are black, and the meat is firm when pressed.
Storage of frozen shrimp: in the freezer for up to 6 months. Thaw in the refrigerator overnight or under cold running water for 15–20 minutes. Never thaw at room temperature — the meat loses texture and spoils quickly.
Fresh shrimp should be stored in the refrigerator for no more than two days. Place them on ice in the coldest part. After thawing, do not refreeze — cook immediately.
