Low-fat broth

A clear broth obtained by prolonged simmering of meat, bones, or poultry with vegetables and spices, but without added fat or with minimal amounts. Used as a base for soups, sauces, and other dishes where a clean flavor foundation without an oily film is needed. When choosing ready-made lean broth, pay attention to the ingredients — a quality product contains only natural ingredients without flavor enhancers or preservatives.

About

Lean broth is the foundation that holds up half of the kitchen. It's not just water with meat: it's concentrated flavor that transforms a simple dish into a complete one. When you cook it properly, you get a clear liquid of golden or light brown color with a clean, deep taste and minimal fat on the surface.

Taste and Use

Lean broth works as a clean canvas. It doesn't overpower the dish with its own richness, so it allows the flavors of other ingredients to shine through. Chicken lean broth is more delicate, beef broth is more expressive and rich. Use it in soups, sauces, risotto, and for braising vegetables. When you need lightness without losing flavor — this is your choice.

The main rule: the longer the broth simmers, the more flavor it extracts from the bones. However, if you want a lean version, it's important to skim off fat and foam at the beginning of cooking and avoid a strong boil. Strain through cheesecloth or a fine sieve — this will remove cloudiness and sediment.

Selection and Preparation

  • If making it yourself, use bones with a small amount of meat — joint parts, poultry backbones, rib bones
  • Simmer on low heat for 2–3 hours for chicken, 4–6 hours for beef
  • Cool the broth in the refrigerator — the fat will rise to the top and solidify, making it easy to remove
  • Ready-made lean broth can be stored in the freezer for up to three months

Store-bought broth is convenient when you're short on time. Choose broths without additives and preservatives, and check the sodium content. Cubes and powders work, but they fall short in flavor purity. If you use concentrated broth, dilute it with water in the right proportion — usually 1 part concentrate to 3–4 parts water.

Works with

  • Soups: vegetable, minestrone, cream soups (they turn out airier on lean broth)
  • Sauces: demiglace, brown and light sauces based on broth
  • Side dishes: risotto, pilaf, porridges, steamed vegetables
  • Fish dishes: lean chicken or vegetable broth works as a base for fish soups and dishes

Lean broth is an investment in quality. Even a small amount of good broth will elevate your dish. Start with chicken if you're new to making broths — it's the simplest and most forgiving.
