Chives

Chives are a perennial plant with thin hollow leaves that are used fresh as herbs. The taste is milder than onions, with a delicate onion aroma and slight sharpness, making it ideal for salads, soups, and garnishing finished dishes. The leaves are cut several times during the season and regrow quickly. Fresh chives are best stored in the refrigerator wrapped in damp cloth.

About

Chives is a perennial plant with thin hollow leaves that are cut as needed. It is often confused with green onions, but chives differ with a more delicate, slightly sweet taste and subtle aroma. It grows as a compact bush and can produce a harvest for several years in a row if properly cared for.

Taste and Aroma

Rzhanets has a mild onion flavor with a barely perceptible sharpness. Its leaves don't "bite" like regular green onions, but rather offer a delicate onion note. The aroma is fresh, herbaceous, without the sharp smell that often lingers on hands and clothes after working with other types of onions. This makes it an ideal choice for dishes where delicacy is needed.

Where to use

Chives leaves are excellent raw — sprinkle them over salads, cottage cheese, sour cream, omelets, and soups at the end of cooking. They decorate the dish and add freshness. Chives tolerate light heat treatment well, but it reveals itself best in raw form. You can add it to butter, cottage cheese, creamy sauces — anywhere a subtle onion note without aggression is needed.

Pairings

  • Cottage cheese and sour cream — classic trio
  • Potato dishes — boiled potatoes, mashed potatoes
  • Eggs — omelets, fried eggs, salads with eggs
  • Fish and seafood — especially smoked fish
  • Creamy soups and purees
  • Cheese and dairy products

Selection and Storage

When buying, choose bunches with firm, bright green leaves without spots or wilting. The leaves should be thin and intact. Dill is stored in the refrigerator in a plastic bag or container for no more than a week. You can place the bunch in a glass of water, covered with a bag on top — this way it will last longer. For long-term storage, the leaves are dried or frozen, although some of the fresh flavor is lost in the process.

Chives are an herb for those who love onion flavor but prefer not to smell like onions. Cut the leaves with scissors just above the ground, and the plant will regrow.
