Sour milk

Prostokvashas is a fermented milk drink produced by natural fermentation of milk without the addition of starter cultures. It has a delicate fermented milk flavor with a subtle tanginess and a uniform sour cream-like consistency. In cooking, prostokvashas is used both as a beverage and for preparing baked goods, pancakes, fritters, and fermented milk desserts, giving them a fluffy texture and characteristic taste. When selecting, it is important to pay attention to the expiration date and packaging integrity, and in recipes it can be replaced with kefir or yogurt, although the flavor profile will be slightly different.

About

Prostokvasha is a fermented milk drink that is produced naturally: milk sours under the influence of lactic acid bacteria, without the addition of starter culture or rennet. The result is a drink with a delicate consistency, a pleasant sourness, and a mild creamy flavor. It is one of the simplest and most accessible ways to obtain a beneficial fermented milk product.

Taste and Texture

The taste of sour milk depends on the degree of fermentation: young sour milk is more delicate and less acidic, with a pronounced milky flavor; more mature sour milk becomes noticeably more acidic and thicker. The consistency is usually uniform and creamy, although sometimes there may be small curds. The fat content varies depending on the original milk — from fat-free to creamy, which affects the mouthfeel and richness of the taste.

Kitchen Use

Sour milk is versatile: it is drunk as a beverage, especially for breakfast or afternoon snack, used in baking instead of milk or sour cream to add fluffiness and a light tanginess, added to porridges and muesli. The acidic dairy environment works excellently in batters for pancakes, fritters, and muffins — it reacts with baking soda, creating an airy structure.

  • Base for okroshka and cold soups in summer
  • Substitute for kefir or yogurt in cold sauces and dressings
  • Ingredient for marinades — the acid helps soften meat and poultry
  • Component of cottage cheese: if you leave sour milk under cheesecloth, it will separate into cottage cheese and whey

Selection and Storage

When choosing, pay attention to the production date — fresh sour milk has a delicate, pleasant aroma and uniform consistency. If you notice any separation of liquid (whey) or an odd smell, it's better to skip it. It is usually stored in the refrigerator for 7–10 days in a tightly sealed container. The longer it sits, the more sour it becomes — this is normal, but if the taste is sharply unpleasant, the product is spoiled.

Sour milk is easy to make at home: milk is left at room temperature (or in a warm place) for 8–12 hours, and it sours naturally. This homemade version often turns out softer than store-bought and allows you to control the level of acidity to your taste.
