Dried Olives

Sun-dried olives are ripe olives naturally dried in the sun until dark brown or almost black. They have an intense, slightly bitter taste with fruity notes and a dense, wrinkled texture that absorbs oil and spices well. In cooking, sun-dried olives are used as a standalone appetizer, added to salads, pastas, stewed dishes and Mediterranean cuisines, and also used as a garnish for meat and fish dishes.

About

Dried olives are a concentrated taste of ripe fruits, dried to a state where they become soft inside and wrinkled outside. Unlike their brined canned counterparts, they retain natural sweetness and a deep fruity profile. This is not just an appetizer, but a full-fledged ingredient that changes the character of a dish.

Aroma and Flavor

Dried olives smell of earth, dried fruits, and a slight bitterness. They taste oily, with a pronounced sweetness and barely noticeable astringency. The flesh is dense but not tough, and easily separates from the pit. Each variety has its own character: black dried olives are more saturated and sweet, green ones have herbal notes and a slight sourness.

Role in dishes

  • In salads, dried olives play an accent role: they add depth and sweetness without excess salt
  • In pastas and risottos, they are sliced or added whole for texture and rich flavor
  • On bread and in bread dough — for aroma and natural sweet-bitter balance
  • In sauces and tapenades, they become the base, creating a complex flavor profile
  • On a cheese board, they highlight the qualities of hard and semi-hard cheeses

Pairings

Dried olives work well with extra virgin olive oil, lemon, garlic, and fresh herbs. They pair nicely with tomatoes, feta, mozzarella, and goat cheese. Their sweetness balances out sharp spices — black pepper, red pepper, coriander. With fish and seafood, they create a Mediterranean contrast.

Selection and Storage

  • Choose olives with uniform color, without mold and stains — they should smell like fruit, not mold
  • Check the packaging: olives should not be stuck together in one lump
  • Store better in an airtight container in a cool place or refrigerator — they absorb odors
  • Storage time in closed form — several months, opened ones should be used within 2–3 weeks
Dried olives do not need to be washed before use — simply take the amount you need. If they are too dry, soak them in warm water or olive oil for 15 minutes.
