Black Rice Vinegar

Dark vinegar with a deep, slightly sweet taste and mild acidity, made from black rice or regular rice with added spices. Used in Asian cuisine for dressing salads, marinades, sauces, and soups, giving dishes a rich color and complex flavor profile. When substituting, you can use regular rice vinegar with the addition of dark soy sauce or balsamic vinegar, though the taste will be slightly different.

About

Black rice vinegar is one of the darkest and richest vinegars in Asian cuisine. It is made from black sticky rice, and the result is a liquid of deep brown or almost black color with a thick, multilayered flavor. It is not just an acid, but a full-fledged ingredient that adds depth and complexity to dishes.

Aroma and Flavor

Black rice vinegar smells of malt, caramel, and fermented grain — a soft aroma, almost sweet, without a sharp vinegary bite. It tastes acidic but not aggressive: the acidity is balanced by sweetness and a subtle bitterness. Notes of fruit, wood, and even smoke are often detected. It has higher viscosity than white rice vinegar, so it coats the tongue slightly.

Where to use it

Black rice vinegar is excellent wherever you need not only a sour taste, but also a subtle aroma. It is added to sauces for pasta, marinades for meat and fish, soups and stews. It works perfectly in Asian dishes — in sweet and sour sauces, in marinades for vegetables, and in okroshka. A few drops in a dip or salad dressing with dark greens — and the dish acquires a completely different character.

What to pair it with

  • With soy sauce, ginger and garlic — a classic trio for marinades
  • With honey or brown sugar — for sweet and sour sauces for duck or pork
  • With sesame oil and green onions — for the final touch in noodles or rice
  • With oyster sauce — for deeper umami in gravies
  • With chili pepper and lemon — for contrasting, vibrant flavors in salads

Selection and Storage

When purchasing, pay attention to the color — true black rice vinegar should be dark, almost opaque. Check the ingredients: it should contain only rice, water, and salt, without unnecessary additives. Good vinegar is slightly viscous and flows slowly down the side of the bottle. The price is usually higher than white rice vinegar, but this is justified — the product is more complex and concentrated.

Black rice vinegar is stored for a long time — in a dark cool place at room temperature it sits peacefully for a year or longer. A refrigerator is not required. If the vinegar becomes cloudy over time or sediment forms at the bottom — this is normal, especially if there are no preservatives in the composition. Simply stir before use or strain through cheesecloth.

Dosage

Black rice vinegar is stronger in taste than white vinegar, so you need less of it. Start with half a teaspoon per serving of sauce and add to taste. In marinades, 2–3 tablespoons per liter of liquid is sufficient. Remember: this vinegar works as a seasoning that emphasizes and deepens the flavor rather than overpowering it with its acidity.
