Salmon Steak

Salmon steak is a cross-section cut of Atlantic salmon fillet 2–3 centimeters thick with a characteristic bone in the center. Salmon meat has a delicate texture, rich buttery flavor, and beautiful orange-pink color thanks to its high fat content and omega-3 fatty acids. When cooking, the steak heats through quickly and requires minimal preparation — simply sear over high heat or bake to preserve the juiciness and delicate flavor of the fish.

About

Salmon steak is a thick cross-section cut of salmon fillet, sliced right through the backbone. The result is a piece with a beautiful bone in the center, marbled meat texture, and fat layers. This format is ideal for quick cooking in a pan or on a grill: the meat stays juicy inside while the edges get an appetizing crust.

Taste and texture

Salmon is distinguished by a delicate, slightly sweet flavor with a subtle marine accent. The meat is firm, yet remains moist with proper cooking thanks to its natural fat. The skin, if left on, becomes crispy and aromatic. The bone marrow inside the steak adds depth of flavor and makes the dish more satisfying.

How to cook

Golden rule: don't overcook. A 3–4 cm thick steak cooks for 3–5 minutes on each side over high heat. Place the skin side down first so it becomes crispy. The meat inside should remain pinkish — this is a sign of perfect doneness. Salt a couple of minutes before frying so the salt has time to dissolve the surface layer.

  • In a pan: heat oil, sear the steak on high heat, then bring to desired doneness on medium
  • On a grill: place skin-side down on the grate, don't flip frequently
  • In an oven: sear in a pan, then finish at 180 °C if you need greater thickness
  • With oil and herbs: add rosemary, thyme, and butter at the end of cooking for aroma

What to serve with

Salmon steak works well with acidity: lemon juice, vinegar, or white wine help balance the richness. Choose light side dishes — leafy greens, boiled potatoes, grilled vegetables. Sauces based on Dijon mustard, cream, or tomatoes will complement but won't overpower the delicate flavor of the fish.

Selection and Storage

Look for steaks with bright pink or orange meat, without dark spots or unpleasant odor. The skin should be shiny, with scales fitting tightly. Fresh steak is best cooked on the day of purchase, but it will keep in the refrigerator for 1–2 days in an airtight package. Thaw frozen steak in the refrigerator overnight, don't rush it at room temperature.

Steak thickness is the key to success. Thin slices dry out in seconds, while a thick piece of meat heats evenly, retaining moisture.
