Step 2
In a saucepan, mix flour with salt and butter grated on a grater. Rub the mixture with your hands until smooth.
- 3
Step 3
Make a well in the center of the flour and pour the starter into it. Carefully mix the starter with the flour using a spoon, gradually adding the remaining water.
- 4
Step 4
Sprinkle flour on the table and knead the dough with your hands for 10 minutes, adding flour as needed (3–4 tablespoons may be required).
- 5
Step 5
Cover the dough with a towel and let it rise for 1.5–2 hours at room temperature. It will increase in size by 2–2.5 times.
- 6
Step 6
Divide the dough into three parts, gently stretch them into flat bars and press against the table. Cover with a towel and let it rest for 30 minutes.
- 7
Step 7
Preheat the oven to 200 degrees. Place parchment paper on a baking sheet and sprinkle it with flour. Spread the dough and let it rest for 10 minutes.
- 8
Step 8
Brush the surface of the loaves with egg (you can use only yolks). With a sharp knife, make cuts for even rising and an attractive appearance.
- 9
Step 9
Place a separate baking sheet with 2 cups of water on the lower oven rack. Place the baguettes on the middle rack. After 20 minutes, when the water has evaporated, reduce the temperature to 180 degrees and bake for another 25 minutes.

Step 10
After baking, do not remove the loaves from the oven immediately. Let them cool for 30–40 minutes.
