Pork Skewer with Onion and Wine
The meat is marinated in finely chopped onions with wine, which makes it tender and juicy. Red wine can be replaced with a carbonated drink — it will soften the fibers even better. The onions can be marinated separately and threaded onto a skewer along with the meat.

Step 1
Cut the pork into equal pieces roughly the size of a child's fist. Place in a large pot.

Step 2
Clean and finely chop the onion — it's most convenient to use a food processor. Add the onion to the pot with the meat, salt, pepper, and mix thoroughly with your hands.
Cover the pot with a lid of smaller diameter, press down firmly so that the juice comes out. Place in the refrigerator overnight.

Step 3
2 hours before cooking, pour in the red wine and stir.

Step 4
Heat the coals. Thread the pieces onto skewers, pressing them firmly by hand so the meat sits snugly on the skewer. Grill until cooked through.

Step 5
Serve the skewer with plenty of fresh herbs, vegetable salad and red wine.
