Instructions

  1. 1

    Step 1

Melt 150 g of chocolate together with 6 tablespoons of cognac, coffee and vanilla extract in a water bath. Do not stir until the chocolate is completely softened.

  2. 2

    Step 2

Add 100 g of butter, remove the saucepan from the water bath and let the butter soften. Then mix the mixture.

  3. 3

    Step 3

Place the chestnut puree in a mixer, beat with sugar, add melted chocolate and mix thoroughly.

  4. 4

    Step 4

Spread the mixture into a baking pan lined with aluminum foil. Leave overnight in the refrigerator to harden.

  5. 5

    Step 5

The next day, remove the mixture from the mold and shape it into a log with your hands. Trim the edges, creating bevels. Form branches from the trimmings and place them along the edges of the log. Place the log on a dish covered with foil and put it in the refrigerator.

  6. 6

    Step 6

For the glaze, melt 150 g of chocolate with 2 teaspoons of cognac and 50 g of butter in a double boiler. Stir until it reaches a paste-like consistency. Cover the log with the glaze using a soft spatula. Use the tines of a fork to draw grooves that imitate tree bark.

  7. 7

    Step 7

Decorate the yule log with flowers or small marzipan figurines.

  8. 8

    Step 8

Before serving, place the log on a lace paper napkin and dust with powdered sugar through a sieve.
