Instructions

  1. 1

    Step 1

Mix flour, baking powder, sugar, and butter in a blender until breadcrumb consistency. You can also mix all ingredients by hand and chop with a knife.

Transfer the mixture to a deep bowl. Add breadcrumbs, fruit marmalade, raisins, dates, cinnamon, nutmeg, eggs, milk, cognac, lemon juice and lemon zest.

    Mix all ingredients thoroughly.

  2. 2

    Step 2

Divide the dough into 2 parts.

Grease two 2-liter baking dishes with softened butter. Transfer the dough into the dishes and level the top.

Cover each form with parchment paper or baking paper, then with a double layer of foil.

    Leave overnight at room temperature.

Place each mold in a larger pot. Pour hot water into the pot so that it reaches halfway up the molds.

  3. 3

    Step 3

Place the pot on the burner and bring the water to a slow boil for 20 minutes.

Then place in the oven to simmer for 6–8 hours or overnight. The longer the pudding simmers, the better.

  4. 4

    Step 4

The pudding can be prepared in advance and stored. On the day of serving, wrap the molds in foil and place in a preheated oven for 2–3 hours.

  5. 5

    Step 5

Serve the pudding with a sauce made from cognac, brandy, or whiskey. Prepare a simple sauce based on cornstarch and add 3–4 teaspoons of strong alcohol.
