Instructions

  1. 1

    Step 1

Mix the flour with salt. Add water and knead soft, elastic dough.

Oil the table and continue kneading the dough. Divide into 6–8 equal parts.

Take one part, lightly brush it with oil and roll it out very thin — so thin that the dough becomes translucent.

  2. 2

    Step 2

Grate the cheese. Finely chop the herbs.

Mix cheese and herbs. Alternative filling options: cottage cheese with herbs, ground meat, egg with herbs.

  3. 3

    Step 3

Spread the filling on half of the rolled out dough and smooth it out.

Cover with the second half of the dough and slightly press the edges together. Form a flatbread of a size that will fit on the pan.

  4. 4

    Step 4

Heat a skillet (preferably cast iron) over medium heat.

Place the gezleme on a skillet. Fry for 1–2 minutes, then flip. Repeat flipping several times until the flatbread acquires a golden-brown crust on both sides.

  5. 5

    Step 5

Transfer the finished flatbread to a board and drizzle with oil.

Fold in half and let it soak for 30 seconds. Unfold, flip over and repeat on the other side.

Cut into small squares and serve.
