Pan-Fried Suluguni
Crispy cheese slices with a tender filling inside. Serve immediately from the pan while the cheese is hot and hasn't solidified. Complement with a sauce made from melted butter, garlic, and cilantro — no salt needed, the cheese is already sufficiently salty.

Step 1
Melt the butter in a pan, add olive oil and heat the mixture well. Butter burns quickly, so olive oil protects it from burning. Use refined vegetable oil rather than extra virgin. Alternative: use clarified butter — it will allow you to fry more cheese with less fat.

Step 2
Cut the suluguni into slices 1 cm thick. Fry on hot oil on one side until golden brown, then flip and fry on the other side.
Serve immediately on a hot skillet while the cheese is still melted and hasn't hardened.
