Homemade Chicken Broth
Clear and aromatic chicken broth with vegetables. The taste depends on the quality of the poultry and proper cooking technique: boiling without a lid, adding vegetables at the right moment, and salt control. Suitable as a base for soups and sauces, as well as a standalone dish.

Step 1
Prepare the chicken: you can leave it whole or cut it into 2–4 pieces. Place it in a pot and cover with cold water so that it covers the bird by 1.5–2 fingers. Bring to a boil over high heat.

Step 2
After it comes to a boil, reduce the heat to low. Skim off the foam that forms on the surface. Do not cover the pot with a lid — this will keep the broth clear.

Step 3
Chop the onion and carrot into large pieces. Add them to the broth. Pre-lightly fry the carrot in a dry pan — this way it will give more color and flavor.

Step 4
Simmer the broth over low heat. The cooking time depends on the type of chicken: homemade chicken takes 1–2 hours, broiler chicken takes about 40 minutes, and boiling chicken takes 2–3 hours.
During cooking, water will evaporate. If necessary, add hot water to maintain the required volume of liquid.

Step 5
Regularly taste the broth for salt. If you want flavorful meat, salt it immediately after boiling. If you need a beautiful clear broth, add salt at the end of cooking.
If the chicken turned out bland, enhance the flavor with a chicken bouillon cube or additional salt.

Step 6
Strain the finished broth through a sieve. Remove the meat and vegetables. The broth is ready for use or storage.
