Chicken

Poultry meat with a tender texture, neutral flavor, and low fat content, making it a versatile choice for most culinary techniques. Chicken readily absorbs the flavors of marinades and spices, which is why it's often used in marinated, braised, and baked dishes, as well as in soups and broths. When selecting chicken, pay attention to the color of the meat — it should be pink rather than gray — and it should have a pleasant smell; cook until fully done, as undercooked poultry poses a health risk.

About

Chicken is the most versatile meat in the kitchen. It absorbs the flavors of sauces and spices, remains juicy when cooked properly, and is suitable for any cooking method: from quick pan-frying to long braising in the oven. It's not just an ingredient, but the foundation for hundreds of dishes.

Meat and its characteristics

The taste of chicken depends on the cut. White meat from the breast is tender and lean — ideal for diet dishes and salads. Dark meat from the thighs and drumsticks is much juicier due to higher fat content, so it withstands prolonged cooking better and doesn't dry out. The skin becomes crispy when seared and adds aroma to the dish.

Young poultry cooks faster and has more tender meat, while older chicken provides a more pronounced flavor and is suitable for broths and stews. Cooking temperature is critical: the meat should heat to 75 degrees inside, but not dry out.

How to cook and pair

  • Breast is great for steaks, cutlets and salads — cooks in 15–20 minutes
  • Thighs and drumsticks are ideal for soups, stewing and baking — require 30–45 minutes
  • Whole bird makes rich broth and looks beautiful on the table
  • Ground meat is suitable for cutlets, meatballs, fillings and pasta

Chicken pairs well with butter, cream, lemon, and white wine. It readily accepts bold spices — black pepper, paprika, garlic, ginger. Asian sauces with soy sauce, fish sauce, and coconut milk reveal it in a new way. Herbs — rosemary, thyme, oregano — enhance the natural aroma of the meat.

Selection and Storage

When purchasing, pay attention to the color of the meat — it should be pinkish-white, without dark spots. The skin should not be sticky or have an unpleasant smell. Fresh chicken is stored in the refrigerator for 2–3 days, in the freezer — for several months. Before cooking, it's better to thaw in the refrigerator rather than at room temperature.

  • Store meat on the lower shelf of the refrigerator to prevent it from dripping onto other products
  • Freeze in an airtight package or container
  • After cooking, consume leftovers within 3–4 days
