Green Papaya with Sweet Sauce and Peanuts

Fresh Thai salad with crispy papaya, spicy garlic and chili paste, sweet palm sugar caramel, and crunchy peanuts. Green papaya is used as a vegetable — it absorbs the flavors of the sauce and becomes the foundation of a dish where spiciness, sweetness, and freshness come together.

Instructions

  1. 1

    Step 1

    Prepare all ingredients.

  2. 2

    Step 2

Grate the green papaya or cut it into thin strips.

  3. 3

    Step 3

Soak the papaya in cold water. It will become crispy and excess starch will be removed.

  4. 4

    Step 4

Roast peanuts in a dry pan until golden brown.

  5. 5

    Step 5

Lightly crush the peanuts in a mortar. Transfer to a separate plate, leaving a little for decoration.

  6. 6

    Step 6

Chop the beans coarsely, removing the ends. If you use regular green beans instead of Thai beans — they will also work.

In a mortar, grind the chili pepper, peeled garlic cloves, and dried shrimp. Do not process until smooth — visible pieces should remain in the mixture.

  7. 7

    Step 7

Add crushed peanuts to the mixture and stir well.

  8. 8

    Step 8

Mix papaya with hot sauce. Mash with a pestle or use gloved hands so the papaya absorbs the sauce flavors.

  9. 9

    Step 9

Melt the palm sugar in a saucepan with a small amount of water. Remove from heat when the sugar turns into a thick, glossy mass.

  10. 10

    Step 10

Squeeze the juice from half a lime. Add caramel, cherry tomatoes, beans, fish sauce, and lime juice to the papaya. Mix well, slightly mash with a pestle.

  11. 11

    Step 11

Arrange the salad on a large plate and sprinkle with the reserved peanuts on top.
