Step 1
Remove wilted lettuce leaves. Cut each head into four parts and rinse thoroughly under cold water to remove sand.
- 2
Step 2
In a skillet with a thick bottom, melt the butter. Cut the bacon into cubes, place it in the butter and simmer over medium heat for about 5 minutes covered.

Step 3
Rinse the leek and chop it into small pieces. Add to the bacon and cook, stirring, until the onion begins to soften.

Step 4
Place the peas and lettuce in a pan, pour in vegetable broth. Season with salt and pepper to taste. As soon as the broth starts to boil, reduce the heat to the minimum, cover with a lid and leave for 20 minutes — the liquid will almost completely evaporate.

Step 5
Arrange the lettuce, peas, and bacon on plates. If more than one or two tablespoons of liquid remain in the pan, increase the heat to maximum and let it evaporate a bit. Taste the sauce and add salt and pepper if needed.

Step 6
Pour the sauce over the braised lettuce and serve, for example, with salmon dishes.
