Spicy and Tender Korean Beef

Thinly sliced beef in a savory marinade with soy sauce, sesame oil, and pear sauce. The meat marinates for several hours, then is quickly seared in a pan until crispy. The dish works well in both spicy and mild versions — red pepper can easily be omitted from the marinade.

Instructions

  1. 1

    Step 1

Slice the beef against the grain into thin slices. Use meat from the ribs or pork shoulder.

  2. 2

    Step 2

In a bowl, mix soy sauce, pear sauce, sesame oil, rice wine, finely minced garlic, and ground black pepper.

If you want spicy meat, add ground red pepper. For a mild version, skip this ingredient.

Add the sliced meat to the marinade and mix thoroughly, ensuring all pieces are coated.

  3. 3

    Step 3

Cover the bowl and let the meat marinate for at least 2 hours. You can marinate for up to a day for a more intense flavor.

  4. 4

    Step 4

Heat the pan and pour in the oil. Place the marinated meat and fry each side for 20–30 seconds until a caramel crust forms and the meat remains tender inside.

Alternative: grill over open flame for about 60 seconds, ensuring the meat is cooked evenly and does not dry out.

Serve with salad leaves and sauce to your taste.
