Step 1
Prepare all ingredients before you start.
- 2
Step 2
Grate the zest of half an orange, squeeze the juice.
- 3
Step 3
Pour boiling water over the almonds, after 2 minutes drain the water and remove the skin. Dry on a dry pan and grind in a mill into fine crumbs.
- 4
Step 4
Sift the flour into a separate bowl and mix with baking powder.
- 5
Step 5
In another bowl, beat the butter with sugar using a mixer for 10 minutes. Add the egg yolks and continue beating for another 10 minutes.
- 6
Step 6
Add orange juice, cognac and zest, continue whisking.
- 7
Step 7
Add ground almonds, then carefully fold in the flour with baking powder.
- 8
Step 8
Whip the egg whites until stiff peaks form (about 5 minutes). Carefully fold them into the batter with a spoon or spatula in one direction to avoid deflating the whites.
- 9
Step 9
Place the dough in a greased baking dish. Put it in a preheated 200°C oven for 30 minutes. Check for doneness with a toothpick — if it comes out dry, the pie is ready.
- 10
Step 10
Remove the pie from the oven and let it cool. Before the holiday, wrap it in foil and place it in the refrigerator — the aroma will become even more rich.
- 11
Step 11
Sprinkle the top with powdered sugar. For best results, use a stencil.
- 12
Step 12
Brush the surface with water, syrup, or cognac so that the topping adheres better. If the cake surface is uneven, flip it upside down.
