Pilaf with Lamb and Goji Berries

An Eastern dish with tender meat, fragrant devzira rice, and piquant goji berries. Lamb is stewed with vegetables and spices, then combined with rice in a kazan. The dish is prepared without stirring, allowing each grain to absorb the aroma of the meat and spices.

Instructions

  1. 1

    Step 1

Sort through the devzira rice, removing debris and damaged grains. Pour the rice into a bowl, add salt and cover with cold water. Let it soak for 30 minutes.

  2. 2

    Step 2

Clean the lamb from films and fat. Remove the meat from the bone and cut it into cubes approximately 3 cm in size.

  3. 3

    Step 3

Cut the carrots into long thin sticks 3–4 mm thick. Cut the onion into half rings.

  4. 4

    Step 4

Pour vegetable oil into a cauldron and heat it. Put the onion into the hot oil. When the onion turns golden, add the carrot, pilaf spices, salt, black pepper, and cumin.

Reduce the heat, cover the lid and simmer for 5 minutes until the vegetables release their juice. Then add the salted lamb.

  5. 5

    Step 5

Drain the water from the rice, leaving only the absorbed portion. Pour the rice into a cauldron and pour boiling water over it so that the water level is two fingers above the rice.

  6. 6

    Step 6

Rinse whole garlic heads and submerge them in rice. Cover with a lid, set to medium heat and do not open the lid for 20–30 minutes. Do not stir the pilaf.

  7. 7

    Step 7

Open the lid and check that the water has been completely absorbed. Add cayenne pepper, barberry, and goji berries. Close the lid for 5 minutes to allow the ingredients to combine.

Turn off the heat and leave the pilaf covered for another 15 minutes. Do not open the lid or stir.

  8. 8

    Step 8

Arrange the pilaf on plates: first rice, then meat and vegetables. Place a garlic clove on top.
