Step 1
Prepare all ingredients.
- 2
Step 2
Cut the onion into half rings. If you plan to thread the onion onto skewers, cut it into rings.
- 3
Step 3
Slice the garlic thinly.
- 4
Step 4
Transfer the onion and garlic to a large bowl. Add the bay leaf, thyme, allspice, sugar, and salt.
- 5
Step 5
Pour boiling water over the onion with spices, stir and let cool completely.
- 6
Step 6
While the marinade cools, cut the meat into cubes with sides of 3–5 cm depending on the size of the skewers.
- 7
Step 7
Add vinegar and meat pieces to the cooled marinade, mix well. Leave at room temperature for 2 hours. If you need more time, move the skewers to the refrigerator — you can store them there for up to a day.
- 8
Step 8
Thread the meat onto skewers, without pressing the pieces too tightly against each other.
- 9
Step 9
Grill the skewer over hot coals on all sides until cooked through. Check for doneness by making a small cut: clear juices should flow from the meat.
- 10
Step 10
Serve the finished skewers with your favorite vegetables and herbs.
