Instructions

  1. 1

    Step 1

Mix wheat flour, whole wheat flour, salt and yeast. Sift the mixture 2–3 times. Add sugar and stir.

In a separate bowl, whisk the egg, add water and olive oil, and stir.

Gradually add the liquid mixture to the flour. First mix with a fork, then knead an elastic uniform dough with your hands.

Place the dough in a bowl, cover with a towel, and let it rest for 40 minutes in a warm place.

  2. 2

    Step 2

Rinse the squid and pat it dry with a towel. Cut part of it into pieces and part into rings.

Boil the squid without spices for 2 minutes after the water boils. Do not overcook. Drain the water.

  3. 3

    Step 3

For tomato sauce, take several tomatoes and remove the skin. Blend them in a blender together with an onion and three garlic cloves.

Salt and pepper the sauce. Add dried oregano, a little thyme and rosemary. Pour in some water.

Place the sauce on low heat for at least an hour. The sauce should reduce in volume by approximately half.

  4. 4

    Step 4

Punch down the risen dough. Roll it out with a rolling pin, shaping it into a circle or to fit the baking pan. Fold the edges inward and form the sides.

Spread the dough with tomato sauce. Layer with: mozzarella, olives sliced into rings, squid, shrimp, green onions.

Sprinkle with parmesan and drizzle with lemon juice.

  5. 5

    Step 5

Bake the pizza in the oven first on the middle rack, then move it to the top rack. Total cooking time is 20–30 minutes.
