Instructions
- 1
Step 1
Knead the dough and place it in an airtight container or bag. Refrigerate overnight.
- 2
Step 2
Remove the dough 20–30 minutes before working with it to let it warm up slightly. Roll out the sheet and cut out the gingerbread house pieces using pre-made templates. You can find templates online or draw them yourself.
- 3
Step 3
Bake at 180 °C for 5–20 minutes. The time depends on the size of the shapes.
- 4
Step 4
Carefully remove the finished gingerbread cookies from the baking sheet and place on a flat surface. At first they will be soft and fragile, but as they cool down they will harden.
- 5
Step 5
Prepare aquafaba — the broth from cooking chickpeas or the liquid from a can of canned chickpeas. Use rich aquafaba of a dark yellow color; if necessary, reduce it to this consistency.
- 6
Step 6
Turn sugar into powder using a coffee grinder.
- 7
Step 7
Whip the aquafaba with a mixer on high speed until stiff peaks form. Add lemon juice, then gradually introduce powdered sugar (no more than 50 g at a time). Continue whipping and adding sugar until you reach the desired consistency. The finished frosting should be thick but elastic.
- 8
Step 8
Grate the nutmeg on a fine grater. Measure ground spices at approximately 2 g per 1 teaspoon. Mix all spices and store in a glass airtight container.
