Plain yogurt

Plain yogurt is a fermented milk product with a soft, creamy consistency and a pure lactic acid flavor without sugar, artificial flavorings, or fruit fillings. It is used in cooking as a base for sauces, marinades, desserts, and baked goods, as well as a standalone side dish for hot meals. When choosing, pay attention to the fat content percentage and production date — the fresher the yogurt, the more active the lactic acid cultures preserve beneficial properties.

About

Plain yogurt is the foundation on which half of all culinary ideas are built. No sugar, flavorings, or thickeners—just milk, starter culture, and time. This yogurt works everywhere: in sweet desserts, in savory sauces, in baked goods, and even in beverages. The key is learning how to choose it and understanding how it behaves in different situations.

Taste and Texture

Taste depends on fat content and fermentation level. Fatty yogurt (3.5–5%) provides a creamy, smooth base — this works best in sauces and creams. Fat-free yogurt seems watery, but it's more neutral in flavor. Acidity varies: young yogurt is milder, aged yogurt is sharper. If you need smoothness, look for yogurt produced 2–3 days ago; if you want a bright acidity for marinades, choose a more 'mature' one.

Consistency comes in two types: drinkable (liquid, like milk) and thick (almost like sour cream). Thick yogurt is more convenient for baking and creamy sauces, while drinkable yogurt is better for marinades, beverages, and dressings. If your yogurt has separated or looks uneven, that's normal: simply stir it before using.

Role in dishes

  • In baking, yogurt leavens the dough and adds moisture. Replace part of the sour cream or milk with it in muffins, pancakes, and cakes.
  • In sauces and dressings, yogurt is the base for aioli, marinades for meat and fish, and cold soups. Add it at the end of cooking to prevent curdling.
  • In desserts, yogurt works as a paste for creams, a component of mousse, and a base for frozen yogurt.
  • In side dishes and appetizers, yogurt becomes a sauce for vegetables, meat, and potatoes — especially if you add spices and herbs.

Combinations and Techniques

Yogurt pairs well with acidity: lemon, lime, vinegar will only enhance its flavor. Spices open up more vibrantly — try turmeric, cumin, paprika, black pepper. Fresh herbs (dill, parsley, mint, cilantro) transform plain yogurt into a complete sauce in a minute. With honey and nuts, yogurt becomes breakfast or dessert.

Main tip: don't boil the yogurt. If you need to add it to a hot dish, first warm the yogurt slightly separately or mix it with a small amount of hot liquid, and then add it to the main dish. This way it will remain creamy and won't turn into flakes.

Selection and Storage

  • Read the ingredients: only milk and starter culture. If you see starch, gelatin, or gum — these are thickeners, and the yogurt is of lower quality.
  • Check the production date. Fresh yogurt (1–3 days) is softer, aged yogurt (a week or more) is more sour and thicker.
  • Choose the fat content depending on your needs: for sauces and creams — from 3%, for marinades and beverages — from 1.5%.
  • Store yogurt in the refrigerator at a temperature of 2–6°C. In a closed container, it lasts until the expiration date; after opening — 3–5 days.

If yogurt has started to separate — this is not spoilage, but a natural process. Just stir it before use. But if an unpleasant smell or mold appears, throw it away without hesitation.
