Instructions

  1. 1

    Step 1

Prepare the liver: remove blood vessels and veins, pour cold water over it and let it soak for 15 minutes.

  2. 2

    Step 2

Heat a large frying pan over medium heat, add 30 ml of vegetable oil.

  3. 3

    Step 3

Add finely chopped onion and chopped cilantro stems. Sauté until the onion becomes translucent.

  4. 4

    Step 4

Add the liver and fry, stirring, for about 10 minutes. The liver should be cooked through but remain tender and slightly pink inside.

  5. 5

    Step 5

Blend half of the liver in a blender until smooth. Chop the second half and mash it with a fork. Combine both parts to create a pâté with chunks.

  6. 6

    Step 6

Slice the pork into thin pieces. Place in a bowl, add 2 tablespoons of soy sauce, orange juice, fish sauce, brown sugar, minced garlic, and sliced green onions. Let it sit for 5–10 minutes.

  7. 7

    Step 7

Fry the marinated pork in a preheated pan with a small amount of oil on all sides for 5–7 minutes until golden brown.

  8. 8

    Step 8

Prepare the sauce: finely chop the cilantro and mint leaves. Mix with mayonnaise, ketchup, 1 tablespoon of soy sauce and sesame oil. Thinly slice the chili pepper and remove the seeds. Add the pepper to the sauce to taste, salt and mix.

  9. 9

    Step 9

Prepare the vegetables: shred the cabbage, cut the carrots into thin matchsticks, slice the cucumbers into thin rounds.

  10. 10

    Step 10

Heat the baguette on a grill or in the oven. Make a deep cut along it without cutting all the way to the edge.

  11. 11

    Step 11

Generously spread pâté on both parts of the baguette. Arrange the vegetables and pork slices, drizzle with sauce and serve.
