Roasted Sweet Potato and Portobello Salad
Sweet potato pairs well with acidic dressings that balance its sweetness. Aromatic portobello mushrooms complement the root vegetable beautifully. Edible nasturtium flowers add a peppery bite, while tatsoi (leafy cabbage) brings freshness and crunch.
