Instructions

  1. 1

    Step 1

Cut the pork loin into strips 5 cm thick. Roll each strip into a roulade and secure with kitchen twine.

Mix the marinade: merken, dried oregano, ground garlic, wine vinegar, paprika, salt and black pepper.

Place the meat rolls in the marinade, cover with a lid, and leave in the refrigerator overnight.

  2. 2

    Step 2

Take the meat out of the refrigerator. Leave some marinade for subsequent processing of the meat in the oven.

  3. 3

    Step 3

Heat a pan with olive oil and fry the meat rolls on all sides until golden brown.

  4. 4

    Step 4

Preheat the oven to 140 °C. Arrange peeled pearl onions on a baking sheet in a single layer, drizzle with a quarter of the olive oil and bake for 20 minutes.

Add the remaining olive oil, cherry tomatoes, ground garlic, fresh oregano and basil, sea salt, sugar, and black pepper. Continue baking for another 20 minutes until the tomato skins crack slightly and the onions become soft.

  5. 5

    Step 5

Increase the oven temperature to 250 °C. Transfer the seared rolls onto a baking sheet with confit, brush them with a pastry brush using the reserved marinade, and bake for about 20 minutes until the meat inside turns light pink.

  6. 6

    Step 6

Let the meat rest for 5 minutes before slicing. Place the pork loin on tomato confit and serve.
