Sweet pepper

Sweet pepper is a vegetable with thick walls and a slightly sweet taste that works well for frying, stewing, and eating raw. It contains plenty of vitamin C and carotene, especially in red and yellow varieties. When selecting, look for fruits with smooth skin without soft spots, and when storing, keep in the refrigerator — this way the pepper stays juicy and crispy longer.

About

Aroma and Taste

Sweet bell pepper is one of the most rewarding vegetables in the kitchen. Its flesh is crispy, juicy, with a delicate sweetness that becomes even more pronounced when heat is applied. The aroma depends on the color: red pepper is sweeter and more intense, yellow adds fruity notes, orange is delicate, green holds a slight bitterness and herbal quality. They are all versatile, but each brings its own character to the dish.

Role in dishes

Sweet pepper works everywhere: raw — a crispy accent in salads and appetizers, when fried it becomes softer and sweeter, in stewing it imparts sweetness to the sauce, when baked it acquires a smoky note. It holds its shape better than hot pepper, making it ideal for stuffing. In soups and stews, pepper is added at the beginning of cooking so it has time to release its flavor but doesn't fall apart.

Food Pairings

  • With tomatoes and onions — the foundation of sofrito and mirepoix, the base for many sauces
  • With garlic and olive oil — a classic of Mediterranean cuisine
  • With chicken, fish and seafood — pepper emphasizes their tenderness
  • With spicy spices (cumin, paprika, cinnamon) — a contrast of sweetness and spiciness
  • With cheese, sour cream, yogurt — creamy sauces soften its sweetness

Selection and Storage

Choose peppers with smooth, shiny skin without dents or soft spots. They should be heavy for their size — this is a sign of juiciness. Thick-walled, meaty peppers taste better than thin-walled ones. Green peppers can be bought unripe and ripened at home, but red, yellow, and orange peppers should already be ripe — they don't ripen after harvest.

Sweet peppers can be stored in the refrigerator for two to three weeks in the vegetable compartment. Keep them away from ethylene, which is released by apples and bananas. If you need to preserve them, peppers freeze well whole or sliced — they will lose their crunch, but will remain tasty for cooking. You can also dry thin strips or make a puree and freeze it in ice cube trays.
