Instructions
- 1
Step 1
Prepare all ingredients in advance. Grate the carrots and onions. Finely chop or crush the garlic. Peel the potatoes, cut into medium pieces and bring to a boil until cooked through.
- 2
Step 2
Heat the pan over high heat. Brown both types of ground meat in olive oil, stirring intensively with a wooden spoon to get crumbly meat rather than a solid patty.
- 3
Step 3
When the meat is browned and excess fat is released, add salt, black pepper, garlic, grated onion and carrot. Simmer for a few minutes, stirring constantly.
- 4
Step 4
Add Worcestershire sauce and stir. Then add tomato paste and mix. Pour in red wine, add thyme and rosemary.
- 5
Step 5
When the wine has evaporated, pour in the chicken broth and cook for 5 minutes. Transfer the filling to a sieve to drain excess fat. The meat filling is ready.
- 6
Step 6
Mash the boiled potatoes. Add salt and pepper to taste and mix. Add egg yolks and mix well. Add most of the grated Parmesan and mix again.
- 7
Step 7
Place the ground meat in a baking dish and level it out.
- 8
Step 8
Spread the mashed potatoes on top and sprinkle with the remaining Parmesan. If desired, create a pattern with a fork on the surface. Bake in the oven at 210 degrees for 25–30 minutes until the potatoes are golden brown. If needed, turn on the broiler to achieve a golden crust.
