Eggplants

Eggplants are vegetables with dense, spongy flesh and thin skin that easily absorb oil and sauces. When choosing, look for young medium-sized eggplants with smooth, glossy skin without dents, as large and older specimens often have a bitter taste and contain more seeds. Before cooking, eggplants are often salted and left for a while to remove bitterness, although modern varieties rarely require this.

About

Eggplant is a vegetable that behaves like a sponge in the kitchen: it absorbs oil, absorbs the aromas of neighboring ingredients, absorbs the character of a dish. It is this ability that makes it indispensable in Mediterranean cuisine and beyond. Eggplant flesh is tender, with a slight bitterness that softens with proper heat treatment.

Aroma and Taste

Fresh eggplant has almost no smell — the aroma appears when heated. On a skillet or in the oven, the vegetable opens up: a light nutty note emerges, deep and slightly smoky. The taste is neutral, but not bland — rather delicate, with a barely perceptible astringency. This neutrality is its main advantage: eggplant does not compete with other ingredients, but enhances them.

Role in dishes

Eggplant works in three modes. First — the main character: parmigiana, caponata, stuffed eggplant, where it takes center stage. Second — supporting role: in stews, pasta, soup, eggplant creates volume and texture without stealing the show. Third — textural element: thinly sliced and fried, it becomes a crispy base or layer.

How to Cook

  • Pan frying — a classic method. Cut into circles or lengthwise slices, salt 10 minutes before frying (this removes excess moisture), fry in oil until golden brown.
  • Baking in the oven — a gentle method. Arrange sliced eggplant on a baking sheet, drizzle with oil, bake at 200°C for 25–30 minutes until tender.
  • Grilling — gives a smoky aroma and beautiful grill marks. Cut lengthwise, brush with oil, cook 3–4 minutes on each side.
  • Stewing — for stews and eggplant caviar. Cut into cubes, stew with tomatoes, garlic and herbs for 20–25 minutes over medium heat.

Successful pairings

Eggplant pairs well with tomatoes, garlic, basil, and oregano — this is a proven Mediterranean combination. It works beautifully with hot peppers and coriander, with coconut milk and ginger, with Parmesan and mozzarella. Butter and olive oil bring out its tenderness, while lemon and vinegar add freshness.

Selection and Storage

When shopping, look for an eggplant with smooth, shiny skin free from dents and dark spots. The skin should be firm — when pressed, your finger should not leave a mark. Size doesn't matter, but young eggplants are more tender and contain fewer seeds. The eggplant should feel substantial for its size: a light vegetable is often dried out.

Eggplant is stored in the refrigerator for 5–7 days in the vegetable compartment. Do not place it near ethylene-producing fruits (apples, pears, avocado) — it will ripen quickly and spoil. Eggplant does not tolerate cold below 10 degrees, so long-term storage in the freezer is not recommended. Cooked eggplant can be frozen for 2–3 months after blanching or frying.

Practical Tips

  • The bitterness disappears if you slice the eggplant, salt it, and let it sit for 15–20 minutes. Then pat dry with paper towels.
  • Eggplant absorbs a lot of oil — if you want to reduce calories, bake instead of frying or use a non-stick pan.
  • Do not cut eggplant with an iron knife and do not place it in iron cookware: the flesh darkens from oxidation. Use ceramic or stainless steel.
  • Young eggplants do not need to be peeled — the skin is thin and edible. Mature ones are better peeled partially or completely, depending on the recipe.
