Sriracha

A spicy red chili paste with garlic, vinegar, and spices originating from Southeast Asia. It boasts a vibrant peppery flavor with fruity notes and medium heat, well-balanced with acidity. Used as a sauce for meat, seafood, and noodles, added to marinades and dressings to impart depth and spiciness, and also serves as a seasoning for finished dishes served directly at the table.

About

Sriracha is a hot sauce that over the past two decades has transitioned from an exotic specialty to an everyday condiment. It is recognized by its characteristic red color, consistency between ketchup and puree, as well as by the balance of heat, sweetness, and acidity. The sauce is so versatile that it works with both Asian dishes and Western cuisine — from pizza to burgers.

Taste and Aroma

The main thing about sriracha is that it's not just spicy. Yes, there's quite a bit of heat there — usually between 2,000 to 5,000 units on the Scoville scale — but that's not the main goal. Against the backdrop of the pepper, you can distinctly taste garlic, vinegar, and sugar. The result is a multi-layered flavor: first comes sweetness, then the heat builds up, and at the end there's a light tanginess. The aroma is bright, garlicky, slightly fruity.

How to use in dishes

  • Dipping sauce for sushi, rolls and fun sticks — the classic way
  • Addition to rice and noodle dishes instead of or alongside soy sauce
  • Seasoning for seafood, especially shrimp and squid
  • Ingredient for marinades and sauces — mixed with mayonnaise, sour cream, yogurt
  • Final touch to soups, especially tomato and spicy Asian varieties
  • Complement to pizza, tacos, sandwiches and even deep-fried foods

Successful Pairings

Sriracha works well with coconut milk, lime, and fish sauce — this is the classic triumvirate of Asian cuisine. It pairs well with avocado, cream cheese, and eggs. When mixed with honey or maple syrup, it creates an interesting glaze for chicken or pork. With vegetables — tomatoes, cucumbers, carrots — it creates vibrant appetizers and side dishes.

Selection and Storage

When purchasing, pay attention to the consistency — a quality sauce should be homogeneous, without separation. The color should be bright red, without darkening. Check the ingredients list: it should contain pepper, garlic, sugar, salt, and vinegar. The fewer additives, the better. Some manufacturers add thickeners and preservatives — this is normal, but make sure once more that the composition suits you.

  • Keep an open bottle in the refrigerator — the sauce will last several months
  • A closed bottle can be stored at room temperature in a dark place
  • If the sauce has thickened or liquid has separated, stir or add a little vinegar
  • The expiration date is usually indicated on the label — rarely exceeds a year or two
Start with a small amount: sriracha is deceptive — its heat builds gradually. It's better to add more than to overdo it on the first try.
